If you've been watching The Boulevard rise at I-494 and Bass Lake Road, or you've already worked your way through the counters at Coborn's Market & Table, you might assume Plymouth's dining scene grows the way most suburban dining scenes grow: a developer breaks ground, a chain signs a lease, a ribbon gets cut. That's one version of what's happening here. It's not the more interesting one.

The two restaurant stories that actually reshaped daily life in Plymouth this year didn't involve a single new building. They happened inside two restaurants that were already here, one open since 1971 and the other a decade-old neighborhood tavern, and in both cases the owner looked at an underused piece of the building and decided the restaurant should do two jobs instead of one. Not a rebrand. Not a relocation. A second shift, running in the same four walls as the first.

That's the thing worth understanding about where Plymouth eats right now. The newest concepts aren't new addresses. They're old addresses that got busier.

The Pizzeria That Built A Second Restaurant Inside Itself

Latuff's Pizzeria has been serving Plymouth since 1971, which makes it the oldest restaurant in the city. For more than fifty years its identity was simple: thin-crust pizza, lasagna, fried chicken, a full bar, a patio for warm nights. Wong Nystrom bought the restaurant from its founding family in 2024, the Star Tribune reported, and by most measures that would have been the extent of the transition. New owner, same menu, business as usual.

Instead, Nystrom looked at a restaurant that closed its doors before lunch and asked a different question: what if it opened them earlier instead?

The answer he landed on wasn't a generic egg-and-bacon menu. In 2024, the beloved Pannekoeken Huis in St. Louis Park served its final Dutch pancake after 25 years in business; CCX Media reported that its lease ended without a new location lined up. Nystrom had grown up going to that restaurant as a kid, and when a Latuff's server who'd previously worked at Pannekoeken Huis introduced him to its former owner, Derek Moberg, the idea clicked into something more specific than "add breakfast." He'd give the closed restaurant a second address inside his own.

Getting there took construction, not just a new menu board. Nystrom built a roughly 1,000-square-foot kitchen addition onto Latuff's, dedicated entirely to breakfast equipment, so the pannekoeken operation could run without disrupting the pizza kitchen a few feet away. Moberg came on to run the morning hours and brought longtime staff with him, including server Brenna Warren, who had a 20-year tenure at the original St. Louis Park location before it closed.

The Star Tribune quoted Nystrom explaining why he didn't just add a standard American breakfast instead of resurrecting someone else's brand:

"Why bring just another American breakfast place, without it being special?"

Latuff's now runs on a schedule most restaurants would find logistically painful: Pannekoeken Huis breakfast Tuesday through Sunday from 7:30 a.m. to 2:30 p.m., and the Latuff's pizza menu Tuesday through Saturday from 11 a.m. to 9 p.m., with a few hours of overlap where you can order both. Nystrom's own shorthand for it, as quoted by the Star Tribune: "We call it breakfast by day, pizza by night." The combined restaurant sits at 10820 Highway 55. On Sundays, breakfast runs until 2:30 p.m.; the pizza menu is listed Tuesday through Saturday.

The Tavern That Turned A Golf Simulator Into A Stage

A few miles away, a different kind of addition was happening at what used to be Rock Elm Tavern, as CCX Media reported. The restaurant had operated as a neighborhood hub for a decade before Plymouth resident Randy Ehlers bought it last fall and relaunched it on March 1, 2026, as Rock Elm Revival. Unlike the Latuff's story, this wasn't about adding a new daypart. It was about converting an underused room into a second revenue engine for a restaurant that was already busy at dinner.

The space in question used to house golf simulators. Ehlers gutted it and built what he now calls The Revival Room, a dedicated area for private events and live music. CCX Media quoted Ehlers describing the two halves of the building:

"That side of the building pays the bills, this side of the building is our gravy. And this is where we have fun, this is where we can really make this restaurant sustainable."

The kitchen changed too, though less dramatically. Ehlers added an on-site smoker running overnight, which now anchors dishes like the Pitmaster Full Smoke plate, a combination of brisket, pulled pork, hot link, gouda hash browns, and coleslaw. Newer menu additions include Revival Shrimp tossed in a dynamite sauce and the Vat 17 Burger, topped with white cheddar, arugula, and candied bacon. The restaurant has also added an acoustic Sunday brunch with live music, and this spring Ehlers said the next step was a permanent stage in The Revival Room built for a full summer of live music. Rock Elm Revival is located at 16605 County Road 24 E, and it keeps a daily happy hour on top of the new event programming, so the tavern-hours regulars and the new event-space crowd are, for now, sharing the same building without much overlap in what draws them there.

What The Pattern Actually Tells You

Put the two stories next to each other and the shared logic gets easier to see. Neither owner treated an established restaurant as a fixed asset to preserve as-is or abandon for something newer. Nystrom saw four unused hours of open floor space each morning and filled them with a restaurant that had nowhere else to go. Ehlers converted the golf-simulator room into The Revival Room, which he now credits with making the whole operation sustainable.

That's a different growth pattern than the one Plymouth's newer developments are following. The Boulevard is filling a 75-acre site with distinct tenants under one roof, each with its own lease and its own identity. What happened at Latuff's and Rock Elm Revival is closer to a single operator deciding their existing building had more capacity than their existing hours were using.

If you live nearby, the practical upshot is that both restaurants now reward visits at times you might not have previously considered. Latuff's on a Sunday morning is a genuinely different restaurant than Latuff's on a Friday night, right down to the staff working the floor. Rock Elm Revival on an early Sunday, with acoustic music running in a room that used to house golf simulators, is a different atmosphere than the same restaurant during its Tuesday happy hour. Neither business is new. Both are worth a second look, or a first one at an hour you'd have skipped a year ago.

It's a small thing, maybe, in a city that's also watching a 75-acre mixed-use development rise at its edge. But it says something about how Plymouth's older commercial corridors are adapting that isn't visible from a construction crane. The oldest restaurant in the city didn't get torn down to make room for something newer. It got a second kitchen. The tavern that's been a neighborhood fixture for a decade didn't get replaced by a concept with better branding. It got a stage.

If you're weighing a move to Plymouth and want the kind of on-the-ground read that goes beyond a listing sheet, from which streets sit closest to which restaurants to how a neighborhood actually lives day to day, that's the sort of local detail Aaron Lowe brings to every conversation with west metro buyers and sellers.
